Broccoli Cauliflower Cheddar Soup

1 medium cauliflower
1 medium broccoli (maybe 3 crowns?)
4 cups chicken stock
1/2 cup butter
1/2 cup chopped onion
1/2 cup flour
1 tsp salt
1/4 tsp pepper
4 cups milk
2 cups grated cheese

1. Cook cauliflower and broccoli in chicken stock until tender. Mash.
2. Melt butter in saucepan. Add onion and saute, don't brown.
3. Mix in flour, salt, and pepper.
4. Add milk, heat until it boils and thickens. Stir constantly (milk burns easily!).
5. Add contents of saucepan to the large pot that has been cooking the cauliflower and broccoli. Add cheese and stir to melt.

DELICIOUS! And it makes enough to take some for lunch the next day!
